      钙是人体中含量最多的矿物质,对人体健康起着重要作用,因此需要在平时饮食中合理补钙。在渔业加工过程中会产生大量的加工副产物如鱼鳞、鱼骨、虾蟹壳、贝壳等。它们是重要的海洋生物钙源,具有资源丰富、安全性高、活性结构复杂等特点。利用海洋生物钙源制备钙补充剂,有利于提高生物资源利用率,提升产业附加值。根据不同钙源的营养成分差异,需要选择适宜的加工方法提取钙质。利用海洋钙源制备的钙补充剂包括无机钙、有机酸钙、氨基酸螯合钙及肽螯合钙。本文从海洋生物钙源的种类、钙补充剂、产品开发等方面综述了海洋生物钙的研究进展,并对海洋生物钙未来发展进行了展望,可为海洋生物钙综合利用与产品开发提供参考。
English Summary:
      Calcium is the most abundant mineral in the human body and plays an important role in human health. Therefore, it is necessary to supplement calcium reasonably in daily diet. During fishery processing, a large number of by-products such as fish scales, fish bones, shrimp and crab shells, mollusk shells, etc. will be produced. They are important marine biological calcium sources with the characteristics of abundant resources, high safety, and complex active structures. Using marine biological calcium sources to prepare calcium supplements is conducive to improving the utilization rate of biological resources and increasing the added value of the industry. According to the difference in the nutritional composition of different calcium sources, it is necessary to choose an appropriate processing method to extract calcium. Calcium supplements prepared from marine calcium sources include inorganic calcium, organic acid calcium, amino acid chelated calcium and peptide chelated calcium. This paper summarizes the research progress of marine biological calcium from the aspects of the types of marine biological calcium sources, calcium supplements, product development, and prospects the future development of marine biological calcium, which can provide reference for the comprehensive utilization and product development of marine biological calcium.
