      磷脂酰丝氨酸( phosphatidylserine,简称PS)在自然界中含量稀少,但在食品、医药、化妆品等行业有极高的利用价值。超临界CO2为非水反应介质,以南极磷虾中提取的磷脂酰胆碱(phosphatidylcholine ,PC)为原料,在磷脂酶A1(PLA1)的作用下使游离DHA结合到磷脂酰胆碱 Sn-2位上,以制备富含DHA的磷脂酰胆碱(DHA-PC),再通过磷脂酶D改性成富含DHA的磷脂酰丝氨酸(DHA-PS),并研究不同条件对其改性的影响。通过单因素和正交实验得到制备DHA-PS的最佳工艺条件为压力9 MPa、温度38 ℃、时间4h,丝氨酸的添加比例1:2,最佳缓冲溶液pH值7.5,得率可达89.73%。
English Summary:
      Phosphatidylserine in nature is scarce, but in food, medicine, cosmetics and other industries it has high value of utilization. With phosphatidylcholine extracted in Antarctic krill as raw materials, the free DHA was bound to Sn-2 position of phosphatidylcholine using supercritical CO2 as non-aqueous reaction medium to prepare rich DHA phosphatidylcholine. DHA-PC was modified by phospholipase D into DHA-PS and studied the effect of different conditions on its modification.Through single factor and orthogonal experiments showed that the best pressure, temperature , time , addition ratio of serine and buffer solution pH value were 9.5MPa, 38℃,4h, 1:2 and PH7.5,respectively,under which the yield of DHA-PS could reach 89.73%.
