| 壳聚糖酶是一种催化降解壳聚糖的专一性糖苷水解酶。基于近年来国内外壳聚糖酶的研究成果,本文对壳聚糖酶的来源与性质、发酵生产和分离纯化、重组表达与工程化研究及其应用开发进行了综述,探讨了壳聚糖酶研究中存在的问题及今后的研究方向,为其进一步开发利用提供参考。 |

| Chitosanases are specific glycoside hydrolases that catalyze the hydrolysis of chitosan. Based on the research results of chitosanase at home and abroad in recent years, the definition and classification, source and property, fermentation production and purification, recombinant expression and engineering research of chitosanase and its application development are reviewed in this paper. The problems in the research of chitosanase and directions of the future research were discussed, which provided reference for further development and utilization. |
